Hi everyone:

Who can help me with this recipe. I haven't been in Belgium for about 11 years and I do miss the Matte Taart that I usually buy every moring when I lived there. So, if someone know how to make these delicious pies, please let me know as soon as possible. I know one of you must know how to make it. Thanks a lot.

Recipe for 6 mattetaarten (big ones) :


50 dl whole milk
25 dl buttermilk
450 grams of sugar
10 eggs
600 grams of puff pastry
1 egg (for finish)


Boil the milk and add the cold buttermilk. Pour the curdled milk thru a muslin cloth and gather the mass. Let it leak out and dry for a night. What you become is what's called a ball of 'matten'.
Push the matten thru a sieve. Mix the matten with the sugar and the eggyolks till it's homogenous. Whip up the eggwhites and gently spoon it under the matten.

Butter the mold and cover the base with a sheet of puff pastry ca. 3 mm thick.
Press firmly and prick with a fork. Spoon the matten on the pastry, coat the sides with some eggyolk and cover with a second sheet of puff pastry. Firmly press down the sides.

Use scissors to cut shapes in the lid of the pie and again coat it all with eggyolk.

Let the pie stand to rest for an hour, then bake it golden brown in an over at 250°C for about 75 minutes.

Take it out of the mold and let it cool on a grill.

Serve when it cooled down.




I'd suggest you only try to make them at home, when you really love to cook heh

Thanks Aviendha,

You know I haven't touch the European measurement for a very long time. So, when I read the recipe with "dl", I was totally lost and I wanted to know how could I convert the European measurement into American measurement. But thanks anyway for sending me the recipe. I really appreciate that.

Aviendha,

Thanks for giving me the website for the measurements. I really didn't know where to look for. I don't know what else to say. And I'm really getting excited thinking about the Matte Taart. My sister can't wait to taste them again. She is more crazy about them than me about them.
I told her about the recipe you've send to me and her face was like a child that got a very big present.
